1 Cornish hen
4 tbsp. Gold’s Deli Mustard
1/3 cup crushed pistachios
1/4 cup parmesan cheese, fresh grated
1 tbsp. butter, melted
salt and pepper
4 oz. potatoes
2 tbsp. truffle salt
fresh parsley & rosemary to garnish
Preheat the oven to 350°.
Clean and rinse the corn hen and pat dry. Use the melted butter to glaze the hen and then pat the hen with the Gold’s Deli Mustard. Crust with crushed pistachio and parmesan and roast at 350° for 30-40 minutes till the internal temp of the hen reaches 160° and the juices run clear.
Boil the potatoes until easily pierced with a fork. Mash the potatoes and mix 2 tablespoons of truffle. Garnish with diced parsley and rosemary.
